The long cool fermentation time is the secret here: The SLOWPROOFER works with a unique gentle slow fermentation process – without scaling, without dehydration. The dough pieces are cooled according to their own dynamics and develop into stable and beautiful dough pieces of the highest quality.


SLOWPROOFING stands for ideally conditioned baked goods over a long period of time. Produced the day before, the valuable dough pieces are gently put into cold sleep. Many hours later, they are brought to an optimal cooking level in a slow conditioning process and then countercooled again. In addition to a sustainable cooling capacity with large-area evaporator technology and large lamella spacing, the recirculation speed within the air guidance system is optimally regulated via the 12" touchscreen control.
