Pain Paillasse® is produced according to a traditional, patented process. Its high dough yield, the long dough rise distinguishes the Paillasse concept - the ideal product for "slow baking" as well as for day and exhibition bakeries.
The flour blends used for Paillasse are made from carefully selected, high-quality cereals. Only Paillasse bakers can obtain these special flour blends from our partner mills in the various countries. The Paillasse flour blend produces more dough than conventional flour.
