A fresh variety of small baked goods with the Artisan SFM EC from Koenig

The breakfast pastry is still popular. At the same time, it is currently quite popular to bake your own pastries, for example, on Sunday. The cost of homemade pastries fresh from the oven is not insignificant. Therefore, bakeries probably do not have to worry about your cookie business, at least if the quality is right. And machine processing can also contribute to reproducible quality, because it requires as a prerequisite dough in which all parameters have been precisely observed, and ensures my uniform shaping, without the " handwriting" of a particular employee.

With the Artisan SFM EC, Koenig has developed a dough belt machine that offers full accessibility and minimal cleaning effort thanks to its "Easy Clean" design. Whether ciabatta, crispy fresh, rose rolls, grain corners or breads – the line processes soft doughs from a TA of 160 without residual dough. The dough strand is gently produced with a hopper, preformer with 3 rollers and a dough band forming module. The forming rollers in the dough band forming module are equipped with their own drives and can thus be adapted exactly to the different doughs. This ensures a uniform dough band right from the start and higher weight accuracy, especially for doughs with high TA and long resting times. The output is 16,200 pieces/hour for square rolls and 11,800 pieces/hour for round rolls.

The operating side is frameless throughout and equipped with safety flaps that can be easily folded upwards for full access to all belts and modules. All belts can be easily unclamped and removed, and the mechanical drive components are also completely enclosed from the dough area. This saves a plant valuable time for cleaning and maintenance. Mold changes for different products are also easy and quick thanks to the good accessibility.
