Dedy Praline Cutter

Our Dedy Praline Cutters are suitable for cutting Praline substance, fat substance, butter, Gianduja, marzipan, fondant caramel, Ganache, jelly substance, Petit Fours, cut praline and similar precisely to squares, rectangles and rhombs.

The praline substance plate of 365 x 365 which has to be cut is the result of rolling out between rails or filling of a mould frame or mould plates. The praline parts are cut this way:

The rolled out, filled out or evenly distributed substance is applied to the tray´s surface of anodized aluminium and is cut in the first direction with the corresponding frame cutter. The thin sheet of V2A (stainless steel) which is part of the accessories is shoved from behind under the cut substance and the stripes will be lifted. The frame cutter will be opened and the stripes will be moved by 90°, they will be placed again on the tray and cut a second time. Thus, square forms are obtained. If the stripes are placed transversal, rhombs are obtained. To produce rectangles for the second cut, another suitable frame cutter is used.

The bearing block (base) consists of anodized aluminum, all other parts are made of stainless steel.

The Dedy Double Cutter is just as good as the Dedy Praline Cutter suitable for cutting Praline substance, fat substance, butter, Gianduja, marzipan, fondant caramel, Ganache, jelly substance, Petit Fours, cut praline and similar precisely. In difference between the Dedy Cutter the Double Cutter saves the turning of the masses between the cross- and the longitudinal cutting.

The bearing block (base) consists of anodized aluminum, all other parts are made of stainless steel.

The Dedy Cookie Cutter is made for cutting round or cornered doughs. The cutting size is 6,5 mm, the dough rope 40 mm, length 390 mm. The Cookie Cutter can be delivered with one round and one cornered moulds, two round moulds, or two cornered moulds.
