Smart scoring innovation: ISCORE unit from Koenig Baking Equipment

The newly developed scoring unit allows cutting of all dough pieces in the most efficient way and with the highest quality. “Our aim is to ensure that our clients achieve excellent scoring quality in their dough, day after day”, Ramón González López (Robotics Application Manager).

With the scoring unit from iscore, Koenig has added a new innovative machine to its portfolio that completes the cutting of dough pieces at high speed and in top quality. Artificial intelligence (AI) processes and the three score technologies are decisive for this. Designed also for small bakeries, the AI sorting of parts allows the machine to automatically change product reference, coupled with a simple construction, make our cutting system the ideal helper for the baker.

Up to 12 robotic arms enable users to make fully automatic cuts in all types of pastry, using 3D scanners and artificial intelligence (AI) to determine the shape and dimensions of the dough piece(s). This involves up to 12,000 cuts per hour per robot. Thanks to different cutting technologies, any type of dough can be cut in the same machine. 

The measurement is adapted to each piece of dough

Thanks to the integrated 3D vision system, the exact position of the loaf on the board is detected, and the cut is adapted to each individual loaf. Regardless of its position on the board or if the shape is not as expected.

Precision and speed

The Bread Scoring Smart System cuts into dough with the precision and speed of expert hands. It uses rotating blades, water jet or ultrasonic tools operated by a robot that allow numerous adjustments such as: Cut opening, depth and inclination.

Excellent results with all types of dough

The blade of the rotating tool draws a thin layer of dough with it, covering the open cells of the loaf and preventing outgassing. For this reason, an optimal cut is obtained even in doughs with a high water content. Water jet cutting is performed without spilling a single drop of the loaf (up to 25 loaves). In ultrasonic cutting, sonotrodes of any type and shape can be used, limited only by the total weight of the tool.
