ITECA Pizza lines

The real Italian pizza realized at an idustrial level. Our highly trained experts can develop and provide variations and nuances optimal techniques and technologies for each type of pizza.

Pizza lines with production capacity from 500 to 16.000 Pcs/h

Complete automatic lines for dough ball or laminated pizza production. Possibility 
to manage the preparation dough room and hot press forming, cross lamination, 
spinner lamination or conic lamination. The rising depends on final product and can 
reach 6 hours on swings. 

For doughs with a water percentage higher than 70%, therefore highly hydrated, we have
developed a proofer with a special support for the balls which allows them to be loaded and unloaded without any residue. In any case, at each complete turn, the support is completely cleaned and floured, in order to receive the next product while maintaining the same characteristics.

Cooking takes place on high temperature stone ovens, the honeycomb ground allows an easy cleaning.

In the last area of ​​the oven we have developed an infrared control system, in order to be able to color the aesthetic aspect of the product as desired.
