For many bakeries, the in-house sourdough contributes significantly to the special characteristics of the baked goods. To enable controlled ripening, we have developed the compact Petit Levain fermenters.

With a volume of 80, 150, 300 and 500 litres respectively, the machine offers every business the right size for daily production. Areas of application are in artisan bakeries as well as in the industrial environment, where the machine is used as vessel for the starter preparation, for special products or for product developments.

The mobile and plug-in fermenter in hygienic design is equipped with a double jacket and a powerful cooling system for temperature control. The current series uses a compact control system with integrated touch display from our partner HORNER. Special attention is paid to the intuitive operation. Different recipes can be freely programmed with single- or multi-stage temperature control. The raw materials are filled manually.

Our aim is to offer you a technical device that reliably guarantees optimum ripening conditions for your doughs. In addition to traditional flour types, the Petit Levain can also be used to produce sourdoughs based on gluten-free raw materials.
